Sweet Potato Surprise … Tasty and Very Easy Sweet Potato Fries Recipe!
Our long awaited, but long forgotten sweet potatoes are here! This summer while planting our garden we tried our hand at growing sweet potatoes with just a couple of sweet potato plants. Unfortunately the plants themselves were a favorite for our resident wild bunnies to nibble on. We tried to ward them off through various methods…but alas our furry friends won…at least that’s what we thought.
Essentially forgotten…and lost among the tomato vines…continued to grow a single sweet potato vine. One day recently my Resident Gardener and our Brown-Eyed Girl came running in to tell me what they found while cleaning up the raised beds. After following what they thought was a random vine into the ground on a treasure hunt of sorts, they found four tiny little sweet potatoes! They were small, but they were there! Underground, forgotten and growing all these months. What a sweet surprise to find them! We will call it a victory and will venture to plant many more next summer because we LOVE sweet potatoes…and this year, Doug is determined to keep the wild bunnies out of our garden one way or another…even if he has to go all Mr. McGregor on them!
One of our favorite ways to cook sweet potatoes is to make baked sweet potato fries. They are so easy and so yummy…I say they are like candy because I can’t stop eating them they are so sweet and good…yet healthy! Bonus!
So here’s how easy it is – 4 simple steps…
- Peel your sweet potatoes and then cut them lengthwise into narrow strips or “fries”.
- Toss them in olive oil…and salt and pepper.
- Lay them on a tin foil lined baking sheet.
- Cook them in the oven for 30-40 minutes at 400 degrees.
Super easy! Super yummy! Hope your family enjoys them as much as we do!
